DINING
Dining Room
Despite a simple, modern appearance, the dining room is the product of centuries of Japanese craftsmanship. A colossal seasonal ikebana flower arrangement greets guests at the entrance, where they are escorted to a private, ocean-facing booth. The doors of each booth are made from a form of wooden latticework called kumiko zaiku, which dates from the 7th century. Gifted artisans hand-cut elaborate symbolic patterns without the use of nails or glue, just exceedingly precise joints. The tower lamps suspended above the tables and the wall coverings are made from beautifully textured washi paper, another local craft whose practice goes back over a millennium. And every dish is served on gorgeous local ceramics whose patterns express the treasured seasonality of Japanese cuisine.
