Since its foundation in 1752, the Daishichi Sake Brewery, located in the historical castle town of Nihonmatsu, has been handcrafting superb sake in the most natural and traditional way, called “Kimoto method.” Daishichi has also developed the innovative superflat rice-polishing technique, which results in sake of optimal purity. These two aspects together lead to a characteristic sake which is rich and complex, but also elegant and stylish. Longer than usual maturation adds extra depth of taste and smoothness. Daishichi receives high acclaim both in Japan and abroad and matches well with a wide variety of international cuisines, including hearty dishes.
