A selection of wine, beer, and soft drinks is arranged on a self-service counter, as well as seasonal varieties of sake from local breweries like Yaoshin, whose Gangi label is one of Otani’s particular favorites. With low lighting, soft jazz, and exquisite examples of Hagi pottery dotting the shelves, the quiet space has the posh feel of a private gallery, but the friendly kimono-clad staff are happy to join you for a chat, answering questions about sparkling sake or encouraging you to partake in some of their homemade warabi mochi, for example.

Seseragi Otani Sanso has two large communal baths with designated times for male and female bathers. Seseragi, a name that means “murmuring brook,” is located on the ground floor, closest to the river. It is distinguished by a large greenery-ringed area outdoors with two pools, one an cypress bath covered by a lantern-hung pagoda and one constructed of textured volcanic boulders. Rising from the stone baths like some primordial deity to sprawl on a sun lounger to dry is a particular pleasure here, although the jacuzzi, sauna, and garden-facing lounge bath inside are also tempting.

Komorebi Otani Sanso has two large communal baths with designated times for male and female bathers. Komorebi, a name that describes sunlight filtering through trees, is located on the 2nd floor. With its slightly higher vantage point, the semi-outdoor bath has better views of the river than Seseragi, allowing bathers to rest their arms on a cypress rim softly furred by long contact with the alkaline waters and sleepily watch the drama of nature, with birds diving from the trees to wade in the water and squads of dragonflies crossing from shore to shore in a lilting ballet. Inside, a large mountain-facing bath is joined by a herb-infused jacuzzi and a sauna.

Main Dining "Zuiun" Zuiun is the main dining room for kaiseki dinner courses. The dramatic stone-lined approach winds through a Japanese-style rock garden before opening on a sophisticated dining area crafted from richly textured wood, leather, and stone. A repeated motif of simple squares adds a touch of modern elegance to the traditional materials, while the warm light and shadows cast from washi-covered lamps lend a comfortable intimacy. The glass exterior provides dramatic nighttime views of the garden’s greenery and ishigaki walls, a scene from the castle keeps of Japan’s feudal era that feels curiously like slipping through time.

Teppanyaki "Choshu" In this exclusive space available to just 13 diners a night, courses centering Yamanashi’s famous Choshu wagyu are prepared atop a gleaming teppan grill. White-clad chefs cook every dish before your eyes, explaining the provenance and particularities of every ingredient. Poolside Restaurant "Fuko" The venue for the ryokan’s expansive buffet breakfast, as well as a buffet dinner option, Fuko is located alongside the pool in a sunny corner of the garden, with floor-to-ceiling glass walls providing views from every table. Even out of season, the gently undulating waters of the pool and its cascading water feature create a relaxing atmosphere, while the simple, warm wood furnishings and elevated ceilings lend the room an airy, comfortable feel. The buffet is set off from the dining area, shielding tables from bustle and noise even at peak times.

Ryotei Dining "Akebono" These private dining rooms are only available to guests staying in suite rooms. They embody the comfortable elegance of Japanese ryotei, the traditional high-end restaurants where epoch-making deals in business and politics were made over endless courses and geisha performances. At Akabono, a kimono-clad staff will greet you at the entrance, ushering you along an atmospheric lantern-lit hallway and into that rarified world. In your private tatami room with sunken table, the unobtrusive staff will serve you the premium kaiseki course, offering sake in cups make by local artisans while the closing rice course cooks in an elegant kama kettle at the back of the room, subtly adding a homey aroma.

Cuisine The cuisine at Otani Sanso draws on the rich bounty afforded by its location. Tucked in the mountains, with the colder waters of the Sea of Japan to the north and the warm, sheltered bay of the Seto Inland Sea to the south, the ryokan’s chefs choose from an embarrassment of riches of sea and land, including diverse seafood, farmed and foraged vegetables, fruits that flourish in the warm climes, and Yamaguchi’s famously rare Choshu wagyu beef. The chefs work with local producers and travel to the port before sunrise each day to collect the freshest, most seasonal fare, creating a new menu each month to highlight ingredients at the peak of flavor.

Meeting Rooms We offer a wide range of banquet and convention halls, from large banquet halls to small banquet halls that can accommodate more than 300 people. Gallery & Telescope Dome In a highly unique offering installed by a previous director enthralled with the stars, Otani Sanso offers free nightly sessions at an astronomical observatory on the roof. This is no tripod-mounted hobbyist’s telescope either, but a full-size, computer-operated rig housed in a rotating dome. Guided by a specialist who teaches about the objects visible that night, guests step to the eye piece and gasp in delight, seeing Saturn’s iconic rings for the first time or the moon’s canals in crystalline detail.

Rooftop & Rivertop terrace The ryokan has two spacious terraces equipped with comfortable chairs and lounge beds for relaxing outdoors in fine weather. Seiyu is located on the 6th floor, surrounded by the greenery of the surrounding mountains. A wide deck area with awning-covered sunbeds is made more pleasant by the installation of an eco-friendly rooftop lawn that creates a garden in the sky while providing insulation for the floor below. Rivertop Terrace is located along the river on the ground floor, shaded by the delicate fronds and firework blooms of a mimosa tree. From its seats, guests can enjoy unobstructed views of the Fukawa’s burbling waters and the natural ecosystem they support.

Kawara Soba "Yanagiya" Yamaguchi’s take on Japan’s ubiquitous soba noodles is quite a unique one. Inspired by a story about soldiers in the 1877 siege of Kumamoto Castle cooking meals on pilfered roofing tiles, kawara soba is a communal pile of matcha-flavored noodles, egg, green onions, and thinly sliced beef served atop a sizzling hot ceramic tile. Lemon and grated daikon is added to cups of dipping sauce. Diners then dunk each bite in that tangy mix as they progress from the softer, chewy noodles on top to crunchier ones fried on the tile below.

Onto the hot spring Onto is a local symbol of a newly reopened day-use hot spring. This traditional hot spring facility was once closed in May 2017 due to building deterioration. After considering the local rebranding concept, Onto is newly redesigned by Mr. Kazuhiro Otani, the owner of Otozure/OTANISANSO, and reborn as a new local symbol of traditional hot spring in March 2020, to inherit the traditions for the future.
