FUFU’s chef draws on his extensive experience at other FUFU resorts to craft an expansive seasonal kaiseki menu with prix fixe options so guests can flexibly customize their dining experience. The menu includes classic and original dishes, as well as signature creations from other properties adapted to Hakone’s local produce. Located within easy reach of the fishing ports on the Pacific coast and the agriculture-rich foothills of Fuji, the FUFU Hakone kitchen boasts a bounty of seafood and fresh fruits and vegetables. Iconic black wagyu beef is the star of the teppan, while washoku delicacies like abalone, spiny lobster, and eel appear in various incarnations in the options for the simmered, grilled, fried and rice courses, accompanied by seasonal produce at its peak.
