Main dining room Le Grand Lys has a burbling spring lit by a silver drop light chandelier at its center, obliquely referencing the nourishing way terroir infuses the cuisine. The ambiance is classic European elegance, with Champagne iced in bowls of Cristofle silver, satiny white linens enlivened by the occasional pop of umber and yellow, and besuited waitstaff standing at the ready, but the 6-, 8-, and 9-course menus are an only-in-Nagano experience.
